In 2016, global production of ginger was 3.3 million tonnes, led by India with 34% of the world total. Nigeria, China, and Indonesia also had substantial production. Nigeria is one of the top producers of ginger in the world. In the Nigerian market, ginger is well known and on high demand. It is used as a spice-in many local cuisine, it is used in breweries to produce ginger ale or ginger beer, and it is also a constituent of some local (herbal) medicines. Kaduna State stands as the highest producer of the crop while states like Gombe, Bauchi, Benue, Nasarawa among others are major producers of the crop. Gingers in Nigeria has been integrated into our local cuisines as it is now being used as an ingredient in many local dishes including soups and stews. Also its flavours and flours are mixed into biscuits, cakes, salads and even medicines.
